Sorry I missed yesterday… February 10, 2007

… But to make up for it here is two. I made this last nite running in and between classes. I had to use that left over mac and cheese, so I took some tomato soup and combined it. It was good considering I also LOVE cheese almost as much as chocolate. SOOO I mixed them, but I suggest not serving it for a gourmet meal.

And today for lunch my roommate and I am taking all the leftover veggies and salsa to put with our hamburgers. This mix and match will be my last creative venture with foor this week.

Will post something new next week!

I didn’t have time for breakfast today so I only had time for a quick smoothie -like morning drink on the go.

All I had was lemonade, a lime, and a lot of frozen strawberries. I blended them up and went out the door. I think that was the only thing to keep my up this morning. I have half a lime and tons more strawberries.. maybe I’ll make some lemonade and create another.. only this time it could use a little vodka.

Gotta Run.. one more class!

 

Wed. Mac and Cheese February 7, 2007

So I have tons of cream cheese and no more bagels (bagels happen to be my roommate’s drunken food of choice). I have to use this up so I added into some mac and cheese – it’s cold and I needed something quick for lunch. So I added some cream cheese and it gave it a rich and thicker sauce. Use it instead of butter, which we are out of at the house. Believe me it will taste so good.

Well I have to run to class. Hopefully post tommorrow!

 

peanut butter for breakfast February 6, 2007

Ok I know I said I was going to create something out of my limited resources each day this week and let you know how it turned out. Well I gotta say the chocolate peanut butter waffles weren’t too shabby. I thought it would be disgusting but with syrup.. it’s fine.

Just make your normal batch of waffle batter (homemade or out of the bow is fine) and add the new chocolate chips with peanut butter swirled into them (I think they are still on sale at the superwalmart in town). They weren’t too bad. I know my friend likes to put cocoa powder into her pancakes and waffles because she and I are chocolate freaks, but I just couldn’t see myself doing that with all that peanut butter too. 

But maybe one day I’ll make this recipe from jif: http://www.jif.com/recipes/rec_kids.asp and add a lot of chocolate.

Keep cooking and I’ll post again soon.

 

Tons of food leftover February 6, 2007

I have little scraps of food laying around from the big game yesterday.  I just got home from work and put the rest of the velveeta, sour cream, and salsa into a pot with some cooked noodles. That was great heated up. I love creating things out of leftovers or just plain experimenting with food, like last night’s spaghetti bake.

I know some people like those at http://stitchesandseams.blogspot.com/ are just like my mom. They just take the tray of food from last night and put it out on the table for the next night. I scream, “Have Fun with it.. create something, or at least make the guys be creative with it.” I’m going to be trying to create something new everyday this week from the limited groceries in my fridge. I’ll let you all know how it turns out.

 

Happy Superbowl!! February 5, 2007

Sorry if you are a bear’s fan, but I’m so happy that the colts won:)

I had some great food this Superbowl Sunday. There was a large batch of spaghetti bake just calling my name. It’s pretty much sour cream, noodles, tomato sauce(you can cheat and buy some Ragu instead of making it yourself), and a lot of cheese on top. It was delicious. You could also throw in your own spices with this type of bake. It was delicious.

This week I’m challenging you to create a dish that you just throw in a lot of different ingredients in to create something that tastes superb. Don’t be afraid not to measure.. just add and taste!
